First full day at El Careyes Resort

We all woke up fairly late on our first morning here at El Careyes. The boys had breakfast at the main dining area and we all headed to the main beach after that. The private beach cove here is really gorgeous. The 'Vibe' here is not like a major hotel or resort -- it's much more relaxed and chill. We are trying to adjust to Mexico time. We had a great swim and all of us went out on stand up paddle boards. It's nice that all three of our boys are super comfortable on any kind of board, especially SUP boards! Austin and Bryce went out for nearly an hour and Austin went way out to the reef, which, of course, made us a bit nervous -- but he is an experienced Waterman so he was just fine. We decided to have dinner again here at the resort. Prior to that, we had a glass of wine at our room, which is quite near the swimming pools and the main dining area (I will add photos of these soon). Prior to our arrival, we asked to have some groceries placed in our room. We asked for some white wine and they supplied us with a really nice Chardonnay from Chile called 'Los Vascos' and I just learned that it is owned by Chateau Lafitte Rothschild from France! It is quite light in body and reminded me of Italian Chardonnays. This wine is perfect for this place -- refreshing, not too heavy, but with some reasonable complexity. I guess the folks at Chateau Lafitte Rothschild probably know what they are doing as they have been making Premier Cru wines in Bordeaux for centuries!

We had another dinner here at El Careyes and since it was a bit earlier than the previous night, we were able to watch the sunset.




The wine list was fairly limited here at El Careyes, but they did have one last bottle of a  nice French wine from the Lanquedoc region called "Champs Du Lievre." It did not disappoint. Interestingly, they serve the red wine here chilled and we all appreciated that as it warms up pretty quickly after it is in the glass.

The Champs Du Lievre was a Carignan Reserve from 2015. It was really special and I'm glad they had one last bottle of it. After reading a bit more on the Web about this winery, I think I will have to order some of their wine. It's 100% organic and none of us noticed any after effects this morning :)
